paired with special selections of limited availability wines
from the Maroon Winery in Napa Valley.

Paul Maroon had a lifelong interest in wine and finally in 2000 realized his dream and moved to Napa Valley. Here he began his life as a vintner. He has been growing grapes and making fine wines in Napa ever since. He is a true visionary in the Napa wine industry. His unsurpassed attention to detail shows in his exquisite portfolio of single vineyard varietals.

This luxurious evening will feature six superb releases. Enjoy these wonderful wines with our autumn menu pairing the best of local foods and exceptional wines.

Tasting Profiles

2009 Maroon Sauvignon Blanc
100% Sauvignon Blanc/This medium bodied wine has a refreshing vibrant citrus finish. Made from St Helena fruit, it has beautiful aromas of figs, pears, green apples with hints of fresh bell pepper and vanilla oak. The mouthfeel has great vibrancy and freshness expressing a combination of crisp acidity and richness of texture on the midpalate.

2008 Maroon Chardonnay
100% Chardonnay/A wine with lovely aromas of pears, apricots, figs, vanilla and light butterscotch. Partial malolactic fermentation gives this chardonnay a perfect balance of lightly toasted creamy oak tones for richness on the palate while allowing brightness from the acidity. This wine also benefits with structure and depth from the barrel fermentation portion of the blend. Further finesse and aromatic complexity from the tank fermentation encompass this wine.

2007 Maroon Shiraz
100% Shiraz (Syrah)/This deep ruby full bodied wine starts out with impressive brambly-berry aromas opening up to spicy, plum and peppery aromas. Oak lends nicehintsofsweetvanillaandmocha. Thefinishislongwithmedium-strength tannins framing this voluptuous wine wonderfully.

2008 Maroon Pinot Noir
98% Pinot Noir, 2% Syrah/This wine has very fragrant aromatics including raspberry, strawberry and dark berry fruits with hints of ginger, clove and vanilla. The tannins are supple and frame the wine very well. It is a medium-bodied wine with a nice balance of fruit and acidity. The berry flavors coat the palate and the finish resonates with berry and spice.

2007 Maroon Cabernet Sauvignon 'Yountville Vineyard'

78% Cabernet Sauvignon,12% Merlot & 10% Cabernet Franc/This full bodied wine is overflowing with ripe rich dark berry fruits. French oak lends hints of toasted oak and vanilla on the nose. Called a ‘Napa power house’ this rich & velevety wine is very full on the palate with supple tanins and a long cherry finish.

2008 Maroon Late Harvest Muscat
100% Late Harvest Muscat aged 18 months in French oak/Rich and decadent, with aromas and flavors of sweet peach, apricot and honey. Crisp acidity balances the lush sweetness of the wine for nice mouth feel and a lingering finish.
